Pour the beef stock in the pressure cooker.Use a wooden spoon to scrape up any caramelized bits from the bottom of the pressure cooker, and mix in the soy sauce. Place the steamer rack in the pressure cooker.
- Then, place the seared Fullblood Wagyu roast on the steamer rack. Close the lid, and turn the venting knob to the sealing position.Set the cooker on high pressure, and use the meat function. This will give you 3 minutes of pressure and 25 minutes of slow release.Once the time is up, use an oven glove to open the pressure valve on top, and let it drain out. Then open the lid carefully, and remove the steamer rack and Fullblood Wagyu top round roast.
- Loosely wrap the roast with aluminum foil, and let it rest for 8 to 10 minutes.Leave the liquid in the pressure cooker - this will be used for the sauce.
- PREPARING THE SAUCE While the Fullblood Wagyu top round roast is resting, squeeze the juice from the oranges into the pressure cooker, and discard the orange rinds. Press the sauté button, and bring the beef sauce to a simmer. Mix 2 tablespoons of all-purpose flour with 1/4 cup of water. Mix the flour and water mixture into the sauce (beef gravy) until you’ve achieved the desired thickness. Taste the sauce, and add more kosher salt and freshly ground black pepper if necessary.
- Turn off the pressure cooker, and add 1/4 cup of heavy whipping cream to the sauce.
- PREPARING THE MASHED POTATOES Place all of the cut Yukon gold potatoes in a large stock pot. Cover the potatoes with cold water, and add in 2 tablespoons of kosher salt. On medium-high heat, bring to a boil. Then, reduce to a simmer and cook for around 20 minutes until the potatoes are soft and easily pierced with a knife. Drain the potatoes in a colander, and place them in medium size bowl.Mash the potatoes with a potato masher until smooth. Warm up the heavy cream and salted butter.
